Beware August 8th!

I'll bet you are thinking that this post is about the opening night of the Olympics which coincidentally happen to fall on August 8th this year.
However, Do NOT be fooled! While you are sitting mesmerized in front of the TV, you may just hear the doorbell ring.

Pizza delivery?!

National "Sneak Some Zucchini Onto Your Neighbor's Porch Night."
You see the Olympics are just a clever cover up, to get you to let your guard down.

In the spirit of the occasion I thought I would post one of my favorite Zucchini recipes. Actually this is the only way that I can get my family (read husband) to eat zucchini.

Chocolate Zucchini Cake - - Complements of my Mom, Vickie Bronson

1 3/4 c. Sugar
2 1/2 c. Flour
1/2 c. Cocoa
2 1/2 tsp. Baking Powder
1 1/2 tsp. Baking Soda
1 tsp. Salt
1 tsp. Cinnamon
2 eggs
2 tsp. Vanilla
2 1/2 c. Grated Zucchini - drained
1/2 c. buttermilk
1 c. Nuts
1/2 c. Butter
1/2 c. Oil

Beat Butter, Sugar & Eggs until blended. Then add other ingredients. put in 9x13 cake pan that has been greased and floured.
Mix 3/4 c. brown sugar, 3/4 c. nuts & 3/4 c. chocolate chips together and sprinkle on top of cake before baking.

Bake @ 350 degrees for 40-45 minutes.

A few notes about the recipe. I don't usually add nuts to the cake mix itself - personal preference. Also, since I am a food snob, I only use Ghirardelli Milk Chocolate chips - and I don't measure the stuff on the top. I think the recipe actually calls for semi-sweet chocolate chips, but I prefer the milk. Oh, and one last thing, it mixes easier if you add the zucchini last.

Now, it would be nicer if your neighbor doorbell ditched you with a nice Chocolate Zucchini Cake instead of just the zucchini, but now you'll be prepared. Then you can call all your friends on your "Zucchini Phone" like the kooky lady below. Seriously she looks way too happy - - maybe she has found another "use" for those pesky zucchini seeds?!?

You are truly a nut! That looks like an awesome recipe! I can't wait to try it. :) I have to ask - are those really from your garden??? I'm impressed! Send some of your dirt my way! :)
